I was busy working at my desk on a rainy autumn afternoon when Dave came in with a lovely little white plate and said “Try this.” On a whim, he had made this sweet potato and baked apple dish. Amazing!
This is a wonderful dessert to satisfy sweet cravings without any added sugar… who needs sugar when you have apples and sweet potatoes!
Ingredients:
- Apples
- Sweet potatoes
- Cinnamon
- Peanut oil
- Salt
- Butter
- Nutmeg
Directions
Peel and cut sweet potatoes into 1/2-inch pieces. Toss in a few drops of peanut oil and generous salt, then roast at 400 degrees until tender and the edges are golden brown.
Peel and cut apples into 3/8-inch pieces. Sauté over low heat in the butter, salt, cinnamon, and nutmeg. Optionally include a bit of corn starch water for consistency.
Combine with the roasted potatoes and serve warm.
