Dave’s Creamy Carrot-Apple Soup

This soup perfectly straddles the line between sweet and savory, and it achieves a perfect texture due to the pureed avocado. I put this soup high on my list of favorite Dave creations. It’s perhaps not as photogenic as the others, but in this case that’s because It was so good I couldn’t be bothered to stop and photograph it before eating it up — so this picture is of the leftovers the next day without the pretty garnishes.

Ingredients

  • carrots
  • apple
  • leeks
  • celery
  • garlic
  • avocado
  • almond milk
  • thyme
  • cinnamon
  • cumin
  • nutmeg
  • sage
  • soy sauce
  • apple cider vinegar
  • lime juice
  • maple syrup

Directions

Briefly sauté, then simmer the flavor out of leeks, garlic, celery, apple, and lots of carrots. Discard the solid matter except for the carrots. Add some avocado (for creaminess) and puree. Reduce some. Add almond milk, herbs, etc. Serve topped with diced carrots, diced apples sautéed in butter, and diced avocado.
